Broccoli Soup

Ingredients
unsalted butter
Onion
Carrots
Broccoli
2 cups Vegetable Stock
1 cup Almond Milk
1 cup Heavy Whipping Cream
Flour
Salt
Pepper
Crushed Red Pepper
Cheddar Cheese
2 Cups Half and Half Optional - (use instead of milk and cream seperately)
Directions
Dice onion, chop broccoli and carrots.
Melt butter in a large stockpot. Add onion, broccoli, and carrots. Saute until veggies are soft.
Add stock, almond milk, and whipping cream. Slowly stir in flour, salt and pepper. Optionally you can add some red pepper flakes for a little heat. Stir over medium heat until the sauce begins to thicken.
Once the sauce has thickened turn off the heat and stir in cheese until combined.
