Cauliflower Wings

Ingredients
1 Head Cauliflower cut into bit sized pieces
2 cups Rice flour
1 Egg optionally use vegan egg
1 tsp Hot Sauce
1 cup Almond Milk
1 cup Peanut Oil
1 tsp Curry Powder
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Smoked Paprika
1 tsp Salt
1 tsp Ground Black Pepper
Directions
Preheat oven to 400 degrees. Cut cauliflower into small bit size pieces and place on baking sheet with parchment paper.
Roast in the oven at 400 degrees for about 20 minutes until cooked but still film, sprinkle with salt and pepper. Make sure not to over cook the cauliflower at this step or they will turn out mushy.
While the cauliflower is roasting, whisk egg and combine with almond milk. Optionally add hot sauce to mix. In a separate bowl combine flour and spices.
Remove cauliflower from oven and baking sheet and allow to cook. Place in refrigerator to speed up the cooling process
Add cauliflower pieces a few at a time to the wet mixture, then the flour, back to the wet mixture, and to the dry mixture one more time and set aside on a tray or baking sheet until all pieces are coated.
Heat oil in a wok or pan to around 350 degrees (medium). The oil should be about 1-2 inches deep, enough to cover the pieces half way while cooking.
Fry cauliflower a few pieces at a time ensuring that you don't overcrowd the pan. Cook pieces 2-3 minutes per side or until they begin to turn golden brown.
Work in batches until all pieces are complete. Add salt to pieces right after they come out of the hot oil.
Once all pieces are complete you can eat as is or dip in your favorite sauce. You can combine them with your favorite sauce but they will loose some of their crunch. They are the best when they are fresh out of the pan. You could also keep them warm in the oven at a low temperature until all pieces are complete.
